Using a pairing knife, make a vertical cut on 1 side of the pepper from the stem to the bottom
Gently cut around the core, discard
Lay out the pepper and gently massage with olive oil. Sprinkle with salt and pepper
Place under the broiler for 3-5 minutes, then flip and broil an additional 2-3 minutes
Now stuff your bell pepper with whatever you like: lunch meat and cheese, rice, beans, meat, scrambled eggs, cheese, sweet potato hash... The possibilities are endless!
