Skillet Corn Side Dish

If you get tired of rice and beans, then you are going to love this easy side dish! Skillet corn is a great compliment to beans of any kind! We have used this recipe for BBQ chicken and baked bean meals, and tacos with refried beans.

 


Another way to serve this side dish is with taco salad! It’s one of our family’s favorite dishes and I hope it’ll become your favorite too!

Ingredients
  

  • 2 pounds frozen corn
  • 1-2 Tbsp. butter or olive oil
  • 2 Tbsp. taco seasoning or make your own
  • 1 packet Stevia or 1 tsp. sugar
  • garnish with fresh or dried cilantro

Instructions
 

  • Add your oil to a large skillet and add the frozen corn.
  • Cook on medium heat for 5 minutes to allow the corn to defrost.
  • Now add all the seasonings and turn up the heat a bit to get a nice golden color to the corn. Mix the corn often, so that all corn kernels can get toasty! Then, you know it's done!
