Recipe For Scones | Gluten-Free | Vegan

The most delicious recipe for scones that are gluten-free and vegan is here. I never really grew up eating scones, but it’s interesting because when you realize you can’t have wheat anymore you want all the wheat things.

When I went gluten free several years ago, I really wanted to make scones. Oat flour is my go-to flour for baking because it’s so cheap, so I figured out a way to make scones using mostly oat flour, but the added almond flour is perfect to lighten up this recipe for scones that are also gluten free and vegan.

The purpose of this recipe for scones is to give you a base. When you start changing your diet and everything starts to change, it’s important to have some basic recipes that you can lean on. This scones recipe is exactly that. I have made all the variations, and they taste amazing using this recipe. These scones are great for special occasions, brunch, school snacks, and even dessert with coffee.

Scones Variations:

There are several variations that you can make to enjoy the best scones recipe, and these are our favorites!

  1. Chocolate Chip and Coconut – Simply add 1/2 cup mini chocolate chips or chopped up regular chocolate chips and 1/3 cup shredded coconut to the batter. If the batter is too thick, add 1/4 cup more water to the mixture. Another yummy version is, instead of coconut add chopped strawberries. It’s really good!
  2. Blueberry – Add 1 cup fresh or thawed blueberries to the batter. If using thawed, you might need to cut back on how much water you add by 1/4 cup. Adding 1-2 tsp. of fresh lemon zest would be good too!
  3. Apple or Pear and Cinnamon – Dice 2 apples or pears. Place in a microwave safe bowl with 2 Tbsp. water. Microwave for 2 minutes. Add to batter with 2 tsp. cinnamon and 1/4 tsp. nutmeg. Sprinkle the top of each scone with cinnamon before baking in the oven.
  4. Cinnamon Raisin – Put 1/2 cup raisins in a Pyrex bowl and add 1/2 cup hot water. Let the raisins sit in the hot water for 10 minutes. Pour raisins with water into batter, and do not add any additional water to the scones recipe. Also add 1 tsp. cinnamon to the batter. Sprinkle the tops of each scone with cinnamon before baking in the oven. This would work with any dried fruit.
  5. Cranberry Orange – Add 1/2 cup dried cranberries to the batter with 2 tsp. orange zest. Instead of water in the main recipe, add 1/2 cup orange juice.
  6. Pumpkin – Make the original recipe, but add 1/2 cup pumpkin puree, 1 tsp. pumpkin pie spice, and only 1/4 cup water to the recipe.

How To Make A Simple Syrup

Simple syrup is a great substitute when looking for a cheap alternative to maple syrup. Maple syrup is actually very good for you among all the natural sweeteners because it has the lowest glycemic index. Our bodies actually respond to this sweetener best, as far as our overall health goes, but it’s very expensive. I use a lot of maple syrup in my recipes, but have found that simple syrup is a great alternative when I am out of maple syrup.

I tend to budget a certain amount each month, and when the maple syrup is gone, well it’s gone until next month. Simple syrup comes in handy. It’s easy to make and only requires 2 ingredients.

  • sugar (white sugar, brown sugar, coconut sugar, sucanat, cane sugar, etc.)
  • water

To make a simple syrup you need a 1:1 ration of sugar and water. I typically take 2 cups of water and 2 cups of sucanat (pure form of sugar cane) any kind of sugar will do, even coconut sugar would work. Combine both ingredients in a saucepan and heat until the water is about to simmer. You do not need to boil this mixture at all, you just need the sugar to dissolve. Once the sugar has dissolved, turn off the heat and let the syrup come down to room temperature before using in a recipe.

If you were to pour hot simple syrup into this best scones recipe, the oat flour will start to cook and you’ll get a gummy odd texture that is not pleasant. Sometimes I stick the warm syrup in the refrigerator to cool down faster.

Toppings On Scones

If you’d like to top your scones with something to add a little more pizzazz, then I would recommend using cane sugar or make a drizzle of either caramel or royal icing. I like topping the scones with a mixture of cane sugar and cinnamon when making apple/pear or pumpkin scones.

A nice little royal icing using powdered sugar and orange juice or lemon juice is good too. You can even making a caramel sauce my heating honey on the stove with coconut cream. If you have any questions just let me know in the comments and I’ll be sure to answer them.

Ingredients
  

  • 4 1/2 heaping cups oats ground into flour
  • 1 1/2 cups almond flour extra fine
  • 1 cup pure maple syrup or simple syrup using water and sugar
  • 1 cup water or you can use any kind of milk
  • 1 tsp vanilla extract
  • 1/4 tsp. salt

Instructions
 

  • Preheat oven to 400 degrees, and line a baking sheet with parchment paper.
  • Combine all the dry ingredients into a bowl and mix well to combine. Add any add ins now.
  • Cut the dough in half, then mold each half of dough into a circular form. Wet your hands with water, to keep the dough from being too sticky.
  • Each disk of dough should be between 1 1/2 - 2 inches tall.
  • Dip a knife into some water, then carefully cut the disks into 8 equal triangle size pieces. Do not try and separate the triangles.
  • Put the scones into the oven for 5-8 minutes to help firm up the dough.
  • Take out the scones, and separate the triangles from each other, so that they aren’t touching. I use a small knife to help.
  • Place scones back into the oven for 10-15 minutes, or until firm to the touch.
  • Cool scones on a wire rack, then serve!
