Protein Packed Muffins

These protein muffins are super easy to make, and very versatile. I take these with me when I go out of town, so I have a quick muffins for breakfast. They are also perfect for an afternoon snack with as much protein as they have. Enjoy!

Servings 12 muffins

Ingredients
  

  • 2 cups almond flour fine ground
  • 4 eggs
  • ¼ cup honey or other liquid sweetener
  • 1 tsp. baking soda
  • 1 tsp. apple cider vinegar
  • dash of salt
  • 1 cup fresh berries
  • ½ cup chocolate chips optional

Instructions
 

  • Preheat oven to 350 degrees.
  • Mix all ingredients together, and pour into a muffin baking pan.
  • Bake for 15-18 minutes. Enjoy!

    I just made these, and they are so delicious! You were right when you said they are versatile! I added some dried cranberries, unsweetened coconut flakes, and some chocolate chips. I used pure maple syrup as my sweetener, and I made them in mini muffin tins so my kids can have them as little snacks. We have been trying to cut gluten out of our diets for almost a year, so your blog has been a God send! Thank you so much for sharing this!
