To make the “Italian sausage” I follow this recipe. It’s easy, cheap and very delicious!

Servings 8 servings

Ingredients
  

  • 1 Italian sausage recipe linked in blog post
  • 1 zucchini, diced
  • 1 tomato, diced
  • 3 cups vegetable broth
  • 1 8oz container cashew cream cheese
  • ¼ tsp. dried thyme
  • 2 Tb corn starch
  • salt and pepper to taste
  • 8 oz box of pasta cooked per package instructions

Instructions
 

  • Make sausage and saute on the stove. Add zucchini and lightly brown.
  • While zucchini is cooking, make the sauce by adding the broth, cream cheese, thyme, and cornstarch to a blender.
  • Pour the sauce in the large pot with the sausage and zucchini.
  • After the sauce thickens (takes about 5 minutes) add the chopped tomato and cooked pasta.
