No Flour Banana Pancakes

These no flour banana pancakes are a cinch to put together. If you do not have coconut sugar, no problem. You could always use brown sugar if you want. The reason why it’s in the recipe is because coconut sugar also absorbs liquid, so it acts as a thickener to the batter. It really helps give the batter the right texture, but you could always try making these without the sugar.

I buy my coconut sugar at the 99 Cent Store! Yep, believe it or not, you can get a 7oz bag for $.99. It’s always my go-to and I store it in the freezer.

1, 2, 3, and 4 ingredients and you’re done! They are that easy to make! I prefer making them on a griddle, but use what you have. If you decide to make them on the stove, you may need to add a little extra butter or oil to keep them from sticking.

You could always use a blender to blend all the ingredients together, but I prefer having chunky bits of banana.

Because the pancakes are very thin, I like to layer them with greek yogurt, or coconut cream, as pictured above. They are delicious! Enjoy!

***Note: because of the natural sliminess of a banana, these do not store very well in the refrigerator. If you want to store them for later, I would suggest freezing them with a layer of parchment paper in between them. Then, you can either reheat in the microwave, or in a toaster oven.

Ingredients
  

  • 1 banana smashed
  • 1 egg
  • 3 Tbsp. coconut sugar
  • 1 tsp cinnamon

Instructions
 

  • Mix all ingredients together in a bowl.
  • Grease your griddle with either oil or butter, then pour about 1/4 cup of batter on the griddle to make pancakes.
  • Pancakes are done when they are lightly golden brown on both sides.
