Low-Carb Enchilada Bake

Enchiladas might just be my favorite food, but eating them in the evenings, and being high in carbs is not a good combination…. So, I decided to ditch the tortillas, and create a simple low-carb enchilada bake that I could still enjoy with my family. My husband loves the flavors, and that it doesn’t make you feel like you have a brick in your stomach. It’s light, flavorful, and super tasty!

You will love that this is only 3 ingredients!!!! Yes, simple dishes are my favorite. Weeknights just call for simple, and this is just that. You can use store bought enchilada sauce, but I HIGHLY recommend you make my EASY Homemade Enchilada Sauce. You will love the flavor, and you probably already have all the ingredients.
