This is my recipe for a lazy stuffed bell pepper. It’s easy to make and you can fill it however you like. It’s perfect for breakfast, lunch, or dinner. I even packed one of these peppers wrapped with provolone cheese and salami for lunch recently when I was out running errands, and it was delicious!

Easy Cheap Dinner Ideas

It’s hard to come up with new and innovated recipes when you’re so busy with work or with the kids, but you still want easy cheap dinner ideas. That’s why I like to keep a few easy recipes like this stuffed bell peppers, that I can throw together in just a few minutes. Each week, purchase a few colored bell peppers like orange, red, yellow, or green and keep them in the refrigerator when you need an easy cheap dinner ideas.

Did you know a red bell pepper has more vitamin C than an orange? A red bell pepper actually has three times as much vitamin C than an orange. It’s time to start eating bell peppers more often. “A bell pepper a day keeps the doctor away” is what it should be.

Lazy Stuffed Bell Pepper

Ingredients
  

  • 1 sweet bell pepper red, orange, or yellow
  • 1 Tbsp. olive oil

Instructions
 

  • Using a pairing knife, make a vertical cut on 1 side of the pepper from the stem to the bottom
  • Gently cut around the core, discard
  • Lay out the pepper and gently massage with olive oil. Sprinkle with salt and pepper
  • Place under the broiler for 3-5 minutes, then flip and broil an additional 2-3 minutes
  • Now stuff your bell pepper with whatever you like: lunch meat and cheese, rice, beans, meat, scrambled eggs, cheese, sweet potato hash... The possibilities are endless!
