Instant Pot Pork Gravy and Mashed Potatoes

This could quite possibly be the easiest instant pot one-pot dinner recipe ever! I love that I can throw everything into the instant pot, walk away, and dinner will pretty much be ready when I’m ready!

Now, you will need to dress up your potatoes into mashed potatoes, but that’s easy! I like to just add sour cream, butter, and a little milk with plenty of salt. Then, I like to just throw a steamable bag of peas in the microwave for a quick side and dinner is done!


Here is a YouTube video I created a while back of this amazing recipe. Now I have learned that there is no need to saute the meat with a little oil ahead of time. It’s just as tasty to skip that step. If you need a step-by-step though, here is the video:

Ingredients
  

Instant Pot Ingredients

  • 2 pounds pork stew meat beef stew meat would work too
  • 1 onion diced
  • 2 cups chicken broth
  • 4 pounds Yukon gold potatoes russet potatoes work too (12 medium ones)

Mashed Potato Add Ins

  • 1/2 cup milk
  • 1/4 cup sour cream
  • 2 Tbsp. butter
  • lots of salt and pepper to taste garlic salt is good too

Gravy Add Ins

  • 1/2 cup water
  • 3 Tbsp. corn starch tapioca starch works too
  • 1 tsp. garlic powder (optional)

Instructions
 

  • In the instant pot, place the raw pork stew meat, the onion, and the chicken broth at the bottom of the pot.
  • Now, place your trivet that came with your instant pot, over the top of the meat mixture.
  • Take 2 pieces of foil, and line your instant pot with the foil, over the top of the trivet. One piece will go vertically and one horizontally. This creates a foil basket on the top half of the instant pot.
  • Now place your potato pieces in your foil basket.
  • Put the lid on, make sure your valve is on "sealing," and put on MANUAL for 45 minutes on HIGH.
  • You can either do a quick release or natural release, it's completely up to you.
  • When you open the lid, you will see a lot of liquid has pooled in your foil lined basket. Be careful when removing your potatoes because you do not want any liquid in your mashed potatoes, add that liquid back into the meat mixture.
  • Make your mashed potatoes by adding the milk, butter, sour cream, and salt and pepper to the potatoes and mash with a potato masher, set aside.
  • Now, mix your water and corn starch together. Put the instant pot on SAUTE and slowly add in the corn starch mixture and whisk it together with the meat and chicken broth until you get a thickened gravy. Also, take the end of your wooden spoon and break-up the meat pieces into small pieces. Then, add in the garlic powder and stir to combine.
  • Scoop out your mashed potatoes onto your dinner plates, and top with the meat gravy. It's so simple and so comforting! Enjoy.
