Healthy Pumpkin Oatmeal Breakfast Bars

These oat flour pumpkin breakfast bars are easy to create, healthy in every way, and so delicious. Pumpkin flavored breakfast bars are moist and perfect for an on-the-go breakfast.

Pumpkin Breakfast Bars

 My husband grabs a homemade pumpkin breakfast bar most mornings, whether on a weekday or the weekend. He loves them.

The taste and texture is very similar to a CLIFF bar, but they have a much fresher taste with fewer ingredients.

Ingredients In Healthy Pumpkin Breakfast Bars

  • 2 cups oats, ground into a flour
  • 1 cup pumpkin puree
  • 1/2 cup liquid sweetener: simple syrup, honey, maple syrup, agave nectar
  • 2 eggs, or flax eggs work too for vegans
  • 2 Tbsp. almond butter
  • 1/2 Tbsp. pumpkin pie spice
  • 1 tsp. cinnamon
  • 1 tsp. vanilla extract
  • 1/8 tsp. salt
  • 1/2 cup chocolate chips or nuts (optional)

How To Quickly Make Oatmeal Breakfast Bars

  1. Put all the ingredients together into ONE bowl.
  2. Mix all the ingredients together with a spatula.
  3. Immediately pour the thick batter into a greased baking dish, or silicone baking dish.
  4. Bake in a 350 degree oven for 20 minutes.
  5. Allow the bars to cool before cutting them. 
  6. Wrap in plastic wrap and store in the fridge for an easy on-the-go breakfast treat.

You can freeze these for later, and they last in the freezer for up to 2 months. They hold up in the refrigerator for a week.

CLIFF Bar Copycat Breakfast Bars

The original breakfast bars recipe that I created is a chocolate version. Healthy breakfast bar recipes are very versatile and offer a lot of wiggle room with the ingredients. These are chocolate flavored with bananas and peanut butter. You’ll have to give these a try too.

Ingredients
  

  • 2 cups oats ground into flour
  • 1 cup pumpkin puree
  • 1/2 cup liquid sweetener honey, pure maple syrup, agave nectar
  • 2 eggs flax eggs work too (2 Tbsp. flaxseed meal mixed with 6 Tbsp. warm water)
  • 2 Tbsp. almond butter
  • 1/2 Tbsp. pumpkin pie spice
  • 1 tsp. cinnamon
  • 1 tsp. vanilla extract
  • 1/8 tsp. salt
  • 1/2 cup chocolate chips or nuts (optional)

Instructions
 

  • Preheat oven to 350 degrees, and grease an 8X8 baking dish, set aside.
  • In a blender, grind oats into flour and pour into a bowl.
  • In the mixing bowl add the rest of the ingredients and mix well to combine. Stir in chocolate chips too.
  • Pour into the greased baking dish. The batter will be thick.
  • Bake for 20 minutes.
  • Let the bars cool for 45 minutes to an hour. Then, cut into 6 bars. Wrap individually in plastic wrap and store in the refrigerator for up to 1 week.
