Instant Pot Shredded Pork Taco Soup

These are the kind of recipes I like to make on Sunday while we are at church. After getting ready, I just literally throw everything in the Instant Pot, we head to church, and when we get home lunch is ready! Now that’s the best kind of recipes!


My family devours this soup with no issues, especially when I serve it with chips, shredded cheese, and black olives!

Instant Pot Shredded Pork Taco Soup

Ingredients
  

  • 1 3-4/lbs picnic pork roast frozen or thawed
  • 2 cups dry pinto beans not pre-soaked
  • 1 bell pepper chopped
  • 1 onion chopped
  • 1 cup corn frozen or thawed
  • 1 can diced tomatoes
  • 3 cloves garlic sliced
  • 3 Tbsp. taco seasoning
  • salt and pepper to taste
  • 2 quarts chicken broth

Instructions
 

  • Add all ingredients to your Instant Pot.
  • Close the lid. Make sure the valve is on "sealing."
  • Push the Manual button, then set it for 70 minutes.
  • Let it naturally release, or quick release 10 minutes after the timer goes off.
  • Shred the pork roast and eat!
  • Favorite toppings: shredded cheese, chips, avocado, cilantro, olives... etc.
