Honey Peanut Butter Oatmeal Cookies

My daughter came home today saying that her class is having an ice cream party tomorrow, but she didn’t want to have the ice cream since it makes her tummy heart (dairy issues).

 

 

Instead, she asked if we could make some cookies! We decided to make these naturally sweetened peanut butter oatmeal cookies as her special treat. They are super simple to make and oh-so-delicious!

 

Honey Peanut Butter Oatmeal Cookies

Servings 10 cookies

Ingredients
  

  • 2 cups rolled oats
  • 1 cup natural peanut butter or any nut butter works
  • ½ cup honey or I do ¼ cup honey and ¼ cup pure maple syrup
  • 1 egg
  • 1 tsp. cinnamon
  • ¼ cup chocolate chips
  • sprinkles (optional)

Instructions
 

  • Preheat oven to 350 degrees.
  • Mix all ingredients together, except for the sprinkles.
  • Using an ice cream scoop, scoop mixture on a cookie sheet or into a pre-shaped muffin pan like these heart shaped cookies.
  • Add sprinkles to the top of each cookie, then bake for 10-12 minutes or until lightly browned.
