Grain-Free and Sugar-Free Chocolate Chip Donuts

Do you wake up on Saturday mornings wishing you could eat a donut?!? I do!!! I haven’t had gluten or white refined sugar though for 4+ years! Yea, but I can still taste that rich yeasty donut from the donut shop, that’s for sure! I had to create a donut that I could enjoy too, but it had to be easy to make. I consider myself a simple cook. I like to create masterpieces from simple, everyday ingredients, and I think I succeeded!


 

I will say, since going gluten-free and sugar-free I use a lot of almond flour and coconut sugar in my baking. You will see that throughout my recipes. However, now these ingredients can be found at most all grocery stores. I hope you enjoy this recipe as much as I do! I think I’ll need to make them again this weekend!


Grain-Free & Sugar-Free Chocolate Chip Donuts

These are sweetened with coconut sugar.

Ingredients
  

Donut Ingredients

  • 1 cup almond flour super fine
  • 3 Tbsp. coconut sugar
  • 2 Tbsp. coconut flour
  • ½ tsp. baking soda
  • ½ tsp. salt
  • 2 eggs
  • ¼ cup melted butter or coconut oil
  • ¼ cup milk any kind would work
  • 1 tsp. vanilla extract
  • ¼ cup chocolate chips for sugar-free, use Lily's brand

Chocolate Glaze Ingredients

  • ½ cup coconut sugar
  • 2 Tbsp. cocoa powder
  • 2 Tbsp. butter
  • 1 Tbsp. milk any kind will work
  • 1 tsp. vanilla extract

Instructions
 

  • Preheat oven to 350 degrees. Grease a donut pan very well.
  • Mix all the donut ingredients together in a bowl, then fill a gallon size Ziploc bag with the dough.
  • Cut one side of the corner ends off, and pipe the dough into your donut pan. You should get 6 donuts with this recipe.
  • Bake donuts for 16-18 minutes.
  • While donuts are baking, make the chocolate glaze.
  • On the stove, add the coconut sugar, butter, cocoa powder, and milk to a saucepan. Bring mixture to a boil, and boil for 1 minute.
  • Remove from heat, add vanilla extract and mix well. Pour glaze into a shallow dish to dip the donuts into, but first let it cool down for a good 10 minutes.
  • When donuts are done, let them rest for 10 minutes before removing them from the pan. You do not want the donuts to break apart...
  • Carefully remove the donuts and dip them into your chocolate glaze.
  • Leftover donuts can be stored in the refrigerator for 3-4 days. Enjoy!
