Easy Tamale Pie

I love having a collection of healthy and easy casserole recipes. Casseroles make weeknight dinners so much easier. I was just recently talking to my dad about casserole ideas, and he told me that my grandma used to make tamale pie. He explained to me how she made it, and I could only imagine how delicious it would have been. Well, I decided to make mine a little more kid friendly and here’s what I came up with. I hope you enjoy!

Traditional tamale pie is not made with a fluffy and sweet cornbread. It’s made with instant corn masa flour. It’s cheap and the big bag lasts a long time! I bought this masa flour at Aldi’s a few months ago for $2.00, and I still have half the bag!

Under the masa and cheese is this quick, throw together, mixture. What’s nice is you can use whatever kind of meat you want. Just like tamales, you can switch up the flavors and use ground beef, ground turkey, shredded chicken, shredded beef, or shredded pork. Enjoy the versatility and flavors of this recipe!

Ingredients
  

Meat Mixture

  • 2 pounds cooked meat ground beef or turkey, shredded pork, beef, or chicken
  • 1 can black beans drained
  • 1 can corn drained
  • 1 can diced tomatoes
  • 1 Tbsp. cumin
  • 1 tsp. salt
  • 2 cups shredded cheese

Masa Topping

  • 2 cups instant corn masa flour
  • 2 cups hot chicken broth or water
  • 3 Tbsp. oil vegetable, coconut, avocado, olive
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • 1 tsp. salt

Instructions
 

  • Preheat oven to 350 degrees.
  • Mix meat mixture together and spread into a greased 9X13 baking dish.
  • Sprinkle cheese over the top of the meat mixture.
  • Mix together masa ingredients together. The chicken broth or water needs to be hot in order to incorporate well into the masa. The seasonings just give excellent flavor!
  • Pour the masa mixture over the cheese and spread into an even layer. Sprinkle with a little paprika before placing in the oven.
  • Bake casserole for 40-45 minutes, or until masa is golden brown.
