Apple Pie Pancake Syrup

Apple Pie Pancake Syrup

Last week we had a pantry challenge. Before going to the grocery store, plan 3 meals (dinners) that you can make with food you already own. Well, easier said than done! So I planned my 3 meals, but the day we decided to have pancakes, bacon and eggs, I realized I had NO SYRUP!

Well, my mind started wondering, what was I going to do? I had no berries, but I had 1 apple and apple juice in the fridge. So I whipped up this easy sauce, and my family loved it! If you are needing syrup for pancakes, or just want to try something new, give this recipe a try. It’s cheap, easy, and full of flavor!

This syrup is also really good on yogurt with granola, and even on vanilla ice cream. Enjoy!

Don’t forget to make these amazing gluten-free oatmeal pancakes. They are so easy to make and absolutely delicious.

Ingredients

  • 3 ½ cups apple juice
  • 1 apple (any kind) peeled and diced
  • ½ cup honey or pure maple syrup
  • 4 Tbsp. corn starch tapioca or arrowroot starch would work too
  • 1 tsp. cinnamon

Instructions

  • In a medium saucepan, on medium heat, bring 3 cups of apple juice and the diced apple to a boil. Boil for 5 minutes.
  • While that is boiling, whisk together the remaining ½ cup of apple juice with the corn starch, set aside.
  • After the apple mixture is done boiling, set the burner to medium-low and whisk in the corn starch mixture.
  • When the juice starts to thicken, add the rest of the ingredients. Mix together until the sauce is nice and syrup like.
  • Ladle syrup onto pancakes.
